Oat Morning Glory Muffins

Ingredients

2 cups all-purpose flour1 cup uncooked quick-cooking oats

4 cup sugar3
4 cup sweetened flaked coconut1 1
2 teaspoons ground cinnamon1 teaspoon baking soda

4 teaspoon salt3 Land O Lakes® Butter, melted
4 cup3 medium (1 1
2 cups) carrots, peeled, shredded1 large (1 1
2 cups) apple, peeled, chopped3 large Land O Lakes® Eggs, slightly beaten
How to make

STEP 1
Combine flour, oats, sugar, coconut, cinnamon, baking soda and salt in bowl; mix well.

STEP 2
Combine butter, carrots, apple and eggs in another bowl; mix well. Add butter mixture to flour mixture; stir just until moistened.

STEP 3
Spoon batter evenly into prepared pan. Bake 18-23 minutes or until toothpick inserted in center comes out clean. Serve warm with Light Butter with Canola Oil.

STEP 4
Heat oven to 375°F. Lightly grease 12 muffin pan cups; set aside.

Serve with Land O Lakes® Butter with Canola Oil, if desired.
