Chocolate Mint Cut-Out Cookies

Ingredients

Cookie

1 cup Land O Lakes® Butter, softened

1 cup sugar

1 large Land O Lakes® Egg

1 teaspoon vanilla

1/2 teaspoon peppermint extract

2 cups all-purpose flour

1/2 cup unsweetened cocoa

1/2 teaspoon baking soda

1/4 teaspoon salt

Frosting

2 cups powdered sugar

1/4 cup Land O Lakes® Butter, softened

1/2 teaspoon peppermint extract

1 to 2 tablespoons milk

How to make

  1. STEP 1

    Combine 1 cup butter, sugar, egg, vanilla and 1/2 teaspoon peppermint extract in bowl. Beat at medium speed, scraping bowl often, until creamy. Add flour, cocoa, baking soda and salt; beat at low speed until well mixed.

  2. STEP 2

    Divide dough in half. Shape each half into ball; flatten to 1/2-inch thickness. Wrap each half in plastic food wrap. Refrigerate 1 hour or overnight until firm.

  3. STEP 3

    Heat oven to 400°F.

    Roll out dough on lightly floured surface, one-half at a time (keeping remaining dough refrigerated), to 1/8-inch thickness. Cut with 4- to 5-inch cookie cutter. Place 1 inch apart onto ungreased cookie sheets. Bake 6-8 minutes or until set. Cool 1 minute on cookie sheet; remove to cooling rack. Cool completely.

  5. STEP 5

    Combine powdered sugar, 1/4 cup butter and 1/2 teaspoon peppermint extract in bowl. Beat at low speed, scraping bowl often and gradually adding enough milk for desired spreading consistency.

  6. STEP 6

    Frost and decorate cooled cookies as desired..
