Ingredients
8 small red potatoes
1 Land O Lakes® Butter, divided
4 cup1 tablespoon finely chopped fresh garlic
1 teaspoon chopped fresh parsley
1 pound boneless skinless chicken breasts
1 (12-ounce) package fresh pre-trimmed green beans
How to make

STEP 1
Pierce potatoes with fork in 2-3 places. Microwave 3-5 minutes or until just beginning to soften.

STEP 2
Melt 3 tablespoons butter in 12-inch skillet over medium heat sizzling. Add garlic and parsley; sauté 1 minute or until garlic is softened.

STEP 3
Add chicken; cook, turning once, 13-18 minutes or until internal temperature reaches 165°F, chicken is golden brown on both sides and juices run clear when pierced with fork. Remove from skillet; keep warm. Wipe out skillet.

STEP 4
Melt remaining 1 tablespoon butter in same skillet. Cut potatoes into bite-sized wedges; add potatoes and green beans to skillet. Cover; cook over medium-high heat, stirring occasionally, 8-10 minutes or until potatoes are golden brown and green beans are tender.

Serve chicken with potatoes and green beans.
