A Timeless Tradition: Making Buttermilk Pancakes for Mom

Making breakfast on a weekend morning can be a tradition. But a tradition can also be a celebration of a special occasion or event. To me, cooking and baking as well as just being in the kitchen and preparing a family recipe is the tradition that I think is special.
A weekend breakfast is usually casual but can be a special occasion. My son, Adam, and his sons, Tyler and Bryce’s cooking occasion was to make pancakes. So, let me show you how to make Buttermilk Pancakes and then show you some of the photos Adam sent me.
The buttermilk in this recipe is what makes the pancakes light and fluffy. If you do not have buttermilk you can “sour” milk by adding 1 tablespoon vinegar or lemon juice to 1 cup milk. You need to let the mixture stand for about 5 minutes before adding it to the other ingredients in the mixing bowl.
Then combine the flour, buttermilk, egg, sugar, melted butter, baking powder and salt in a large bowl.
Beat the ingredients until they’re smooth. The batter will be thick. But, if the batter is too thick, just stir in 1 to 2 tablespoons milk. It should resemble cake batter.
Next, heat a lightly greased griddle to 350° F. A test to know when the griddle is hot enough is to drop a small amount of water onto the griddle. If the water sizzles, the griddle is hot and ready for cooking.
For each pancake, spoon ¼ cupful of batter onto the griddle.
Spread the batter into a 4-inch circle.
Cook until bubbles form on the surface. This should take 2 to 3 minutes.
Turn the pancake over; continue cooking until the pancakes are light brown in color. This should take about 1 to 2 minutes.
Serve these pancakes piping hot with butter and maple syrup or with fresh fruit.
