Watermelon Cookie Slices
Combining green and yellow sugar gives the outside of this easy cookie the appearance of watermelon rind.

Ingredients
3 Land O Lakes® Butter, softened
4 cup3
4 cup sugar1
2 teaspoon vanilla8 to 9 drops red food color
2 cups all-purpose flour

4 teaspoon baking powder1
8 teaspoon salt1
2 cup miniature semi-sweet chocolate chips1
4 cup green decorator sugar1 tablespoon yellow or gold decorator sugar
How to make

STEP 1
Combine butter and sugar in bowl. Beat at medium speed, scraping bowl often, until creamy. Add egg, vanilla and red food color; continue beating until well mixed. Add flour, baking powder and salt; beat at low speed until well mixed. Stir in chocolate chips.

Divide dough in half; shape each half into 4 1/2-inch log.

Combine green and yellow decorator sugars in pie pan. Roll each log in sugar mixture until outside is well coated. Wrap each log in plastic food wrap; refrigerate 1-2 hours or until firm.

Heat oven to 375°F.

Cut logs in half lengthwise; cut each half into 1/4-inch slices with sharp, serrated knife. Place 1 inch apart onto ungreased cookie sheets. Bake 7-9 minutes or until set. Cool completely.
