Make One Get One

It's all about creating one dish and turning the leftovers into something new!

First, make a meal of the perfect late-summer pasta dish, Zucchini Butter Pasta. Set aside 1 cup of the finished recipe for making these quick-fix fritters the next day.

Ingredients

1 cup Zucchini Butter Pasta

1 large Land O Lakes® Egg

2 tablespoons all-purpose flour

2 tablespoons Land O Lakes® Aged Italian Blend Fine Cut Shredded Cheese

1 1/2 teaspoons chopped fresh basil leaves

2 tablespoons olive oil

1 tablespoon Land O Lakes® Butter with Olive Oil & Sea Salt

1/4 teaspoon kosher salt

 

Marinara sauce, tapenade or sour cream, as desired for serving

How to make

  1. STEP 1

    Combine Zucchini Butter Pasta, egg, flour, cheese and basil in medium bowl; mix well.

  2. STEP 2

    Heat olive oil and Butter with Olive Oil & Sea Salt in large skillet until butter is sizzling. Spoon 1/4 cupfuls batter into melted butter mixture, flattening slightly to about 3-inch diameter. Cook 3-5 minutes or until browned on first side before flipping. Continue cooking until crisp and browned on second side. Transfer to paper towel-lined plate to drain.

  3. STEP 3

    Immediately sprinkle lightly with kosher salt. Serve with marinara, tapenade and/or sour cream as desired.

Tip #1

You can easily multiply this recipe by the amount of leftover pasta you have.
