Blueberry Energy Bites
Packed with pumpkin, sunflower and sesame seeds and sweetened with honey, these homemade bites will keep you feeling full between meals.

Ingredients
1 cup frozen whole blueberries
1
2 cup honey2 tablespoons Land O Lakes® Butter
2 tablespoons sugar
1 cup roasted, shelled pumpkin seeds

4 cup sunflower seeds1
3 cup toasted sesame seedsHow to make

STEP 1
Combine blueberries, honey, butter and sugar in 2-quart saucepan. Cook over medium-high heat until mixture comes to a full boil.

Continue cooking, stirring occasionally, 12-15 minutes or until candy thermometer reaches 250°F or small amount of mixture dropped into ice water forms hard but pliable strand.

Add all remaining ingredients, stirring until seeds are well coated and evenly distributed in syrup mixture. Transfer to bowl (mixture will be slightly warm). Let cool 10 minutes, stirring occasionally.

Firmly press seed mixture into 1-tablespoon measuring spoon. With buttered hands, carefully remove mixture from measuring spoon and roll into a ball. Place onto baking sheet; repeat with remaining mixture.

Store energy bites at room temperature up to 1 week in airtight container.
