Blackberry Cobbler
Summertime in a baking dish. Sweet blackberries, sugar and lemon zest are topped with fluffy almond biscuits. We recommend serving warm with a generous scoop of vanilla ice cream.

Ingredients
Berries
18 ounces (4 cups) fresh or frozen blackberries, thawed, if frozen
6 ounces (1 cup) fresh or frozen blueberries, thawed, if frozen
3
4 cup sugar3 tablespoons cornstarch
2 teaspoons freshly grated lemon zest
Topping
1 cup all-purpose flour

2 cup finely chopped almonds1 1
2 teaspoons baking powder1
4 teaspoon salt1 Land O Lakes® Butter, cut into chunks
2 cup cold 2 cup buttermilk1
4 teaspoon almond extract1 tablespoon sanding sugar
Vanilla ice cream, if desired
*Substitute 1 1/2 teaspoons lemon juice or vinegar and enough milk to equal 1/2 cup. Let stand 5 minutes.
How to make

STEP 1
Combine all berries ingredients in medium bowl; toss lightly to coat. Spread into 11x7-inch glass or ceramic (do not use metal) baking dish. Let sit 15 minutes for berries to create juice.

Heat oven to 375°F.

Meanwhile, combine flour, almonds, baking powder and salt in medium bowl. Cut in cold butter until mixture resembles coarse crumbs. Stir in buttermilk and almond extract. Mix until combined (batter with be very thick).

Drop batter by tablespoons onto berry mixture. Sprinkle with sanding sugar. Bake 45-55 minutes or until deep golden brown and center of cobbler is bubbling. Let cool at least 1 hour.

Serve warm with generous scoop of vanilla ice cream, if desired.
