Coffee Cake Muffins

Ingredients

4 cups all-purpose flour1
2 cup granulated sugar1
4 cup firmly packed brown sugar3 Land O Lakes® Honey Butter Spread
4 cup cold1 cup sour cream
1 teaspoon vanilla extract
1
2 teaspoon baking powder1
2 teaspoon baking soda1
4 teaspoon salt1
3 cup chopped honey-roasted peanuts

Honey, as desired
How to make

STEP 1
Heat oven to 350°F. Place paper baking cups into 12 muffin pan cups or grease cups; set aside.

Combine flour, granulated sugar and brown sugar in bowl; cut in 3/4 cup Honey Butter Spread with pastry blender or fork until mixture resembles coarse crumbs. Reserve 3/4 cup crumb mixture for topping.

Add all remaining ingredients except peanuts, additional butter spread and honey to remaining crumb mixture. Beat at medium speed until well mixed. Divide batter evenly among prepared muffin cups. Add peanuts to reserved crumb mixture. Sprinkle 1 heaping tablespoon on top of each muffin.

Bake 20-25 minutes or until toothpick inserted into center of muffin comes out clean. Let cool.

Serve muffins with additional butter spread and drizzle of honey, as desired.
