Pizza Frittata
This easy-to-make egg dish features the familiar flavors of another Italian-American classic. Skip the pepperoni to make it meatless.

Ingredients
1 tablespoon olive oil
2 cups frozen spinach or kale leaves
2 garlic cloves, finely chopped
Kosher salt, to taste
Pepper, to taste

2 cup marinara sauce2 ounces (1 Land O Lakes® Mozzarella Farmstyle Cut Shredded Cheese
2 cup)12 slices turkey pepperoni, if desired
How to make

STEP 1
Heat oven to 425°F.

Heat oil in 8-inch ovenproof skillet over medium heat; swirl or brush to coat bottom and side of pan. Add spinach and garlic; cook 5 minutes or until heated through.

Whisk together eggs, salt and pepper in large bowl. Pour eggs over spinach in pan; stir to combine. Cook, without stirring, 6-8 minutes or until edge is cooked and center is semi-firm. Top with marinara sauce, cheese and pepperoni, if desired.

Transfer frittata to oven; bake 5 minutes or until eggs are cooked through and cheese is melted. For golden brown surface, broil 2-3 additional minutes.
