Butter Pecan Cookies

Ingredients

2 cups pecan halves2 tablespoons Land O Lakes® Butter, thinly sliced
1 cup Land O Lakes® Unsalted Butter, melted, cooled

4 cups firmly packed brown sugar1
2 cup granulated sugar1 large Land O Lakes® Egg (yolk only)

2 teaspoons vanilla extract3 cups (360 grams) all-purpose flour
1 teaspoon cornstarch

4 teaspoon salt1
2 teaspoon baking powder
Pecan halves, for topping, if desired
How to make

STEP 1
Heat oven to 350°F. Line cookie sheets with parchment paper; set aside.

Spread 1 1/2 cups pecan halves evenly over 1 prepared cookie sheet; top with butter slices. Bake 4-5 minutes or until golden and fragrant. Remove pecans from oven (leave oven on); set aside to cool slightly. Chop cooled pecans; set aside.

Combine melted butter, brown sugar and granulated sugar in large bowl; stir well. Add egg, egg yolk and vanilla; stir until combined.

Combine flour, cornstarch, baking soda, salt and baking powder in medium bowl; whisk until combined. Slowly add flour mixture to wet ingredients, mixing until completely combined and dough is formed. Fold in chopped pecans; stir well.

Drop dough by 1 1/2 tablespoons, 2 inches apart, onto remaining prepared cookie sheets. Bake 10-12 minutes. Remove from oven; carefully press pecan half on the top of each cookie, if desired. Cool completely on cookie sheets.
Tip #1
Cooling the melted butter to only slightly warm prevents the sugars from melting, which would result in cookies that spread too much on the pan.
Tip #2
To keep these cookies soft and chewy, take care not to overbake. Cookies should still look soft and slightly underdone in the centers once removed from the oven. They will continue to cook as they cool on the baking sheets.
