Cajun Macaroni Salad
Traditional pasta salad gets a flavor boost from Cajun seasoning and smoked paprika. Top it off with sliced hard-cooked eggs for a classic finish.

Ingredients
16 ounces uncooked dried elbow macaroni
1 tablespoon extra-virgin olive oil
1 1
2 cups mayonnaise3 tablespoons spicy brown mustard
3 tablespoons red wine vinegar
2 tablespoons Cajun seasoning
2 teaspoons smoked paprika
1 teaspoon salt
1 teaspoon pepper
4 ribs celery, sliced
1
2 medium (1 2 cup) white onion, chopped
4 large Land O Lakes® Eggs, hard-cooked, peeled, sliced
Chopped fresh parsley
How to make

STEP 1
Bring 4 quarts water to a boil in large saucepan; add macaroni. Boil 10 minutes or until macaroni is tender; drain. Toss macaroni with oil to coat in serving bowl.

Meanwhile, combine mayonnaise, mustard, red wine vinegar, Cajun seasoning, smoked paprika, salt and pepper in medium bowl; mix well.

Pour dressing over macaroni in bowl. Add celery and onion; mix well. Top with hard-cooked eggs, additional smoked paprika and chopped parsley.

Refrigerate 30 minutes before serving.
