Steak Sandwich with Cowboy Butter
Arugula lends a peppery freshness to this hearty steak sandwich. Rich and savory DIY "cowboy butter" would also work well tossed with cooked pasta, rice or vegetables.

Ingredients
Cowboy Butter
1 cup Land O Lakes® Butter, softened
2 tablespoons finely chopped fresh chives
2 tablespoons finely chopped fresh parsley
2 teaspoons finely chopped fresh garlic
1 teaspoon crushed red pepper flakes
1 teaspoon finely grated lemon zest
1 teaspoon steak seasoning
Sandwich

2 pounds beef ribeye steakSalt, as desired
Pepper, as desired
4 (3- to 3 1/2-ounce) ciabatta rolls, split
2 ounces arugula leaves
How to make

STEP 1
Combine all cowboy butter ingredients in small bowl; mix well. Set aside.

Meanwhile, heat grill pan over medium-high heat. Season steak with salt and pepper. Grill steak 5-6 minutes per side for medium rare or desired doneness. Transfer steak to clean plate; immediately top with 2 tablespoons Cowboy Butter. Tent loosely with foil.

Toast rolls until lightly browned. Spread cut sides of each roll with about 1 1/2 tablespoons Cowboy Butter. Slice steak against grain, about 1/2 inch thick. Divide arugula evenly among 4 buttered roll bottoms. Top evenly with sliced steak. Cover with top half of roll. Warm remaining cowboy butter to serve on side. Serve immediately.

If you prefer, grill your steak and rolls outdoors instead of on a grill pan indoors.
