Cheesy Hash Brown Egg Bake

Ingredients

4 (2 tablespoons) Land O Lakes® Butter Balls

20 ounces frozen hash browns,   thawed

16 ounces (4 cups) Land O Lakes® Sharp Cheddar Farmstyle Cut Shredded Cheese, divided

12 large Land O Lakes® Eggs, divided

1 tablespoon kosher salt, divided

1 teaspoon pepper, divided

1 pound bulk (ground) Italian sausage

1 medium (1 cup) red bell pepper, chopped

1 small (1/2 cup) onion, chopped

1 cup Land O Lakes® Half & Half

1 teaspoon ground mustard

2 tablespoons sliced green onions

 *Substitute refrigerated hash browns for the thawed frozen.

How to make

  1. STEP 1

    Heat oven to 425°F. Place Butter Balls into 13x9-inch glass baking dish. Place baking dish in oven; heat 2 minutes or until butter is melted. Remove from oven. With pastry brush, spread melted butter over bottom and up sides of baking dish.

  2. STEP 2

    Combine thawed hash browns, 8 ounces cheese, 1 egg, 1 1/2 teaspoons salt and 1/2 teaspoon pepper in large bowl; mix well. Press potato mixture evenly onto bottom of prepared baking dish. Bake 20 minutes. Remove from oven; reduce oven temperature to 375°F.

  3. STEP 3

    Meanwhile, crumble sausage into large nonstick skillet. Cook over medium-high heat, stirring to break up sausage, until browned and no longer pink. Using slotted spoon, remove sausage to small bowl. Add bell pepper and 1/2 cup onion to skillet; cook, stirring occasionally, 5 minutes or until vegetables start to soften and color.

  4. STEP 4

    Combine remaining 11 eggs, half & half, remaining 1 1/2 teaspoons salt, ground mustard and remaining 1/2 teaspoon pepper in large bowl; whisk until blended.

  5. STEP 5

    Top hash brown crust evenly with sausage, bell pepper mixture, 4 ounces cheese and egg mixture. Bake 20-25 minutes or until eggs are just set and knife inserted in center comes out mostly clean. Sprinkle with remaining 4 ounces cheese; continue baking 2-3 minutes or until cheese is melted. Sprinkle with green onions.

Swap out any of the veggies for your favorites.

Tip #2

To quickly thaw frozen hash browns, place them in microwave-safe bowl and microwave at 50% power, stirring every minute or two.
