Pistachio Chocolate Chunk Cookies

Ingredients
1 Land O Lakes® Butter, softened
2 cup3
4 cup firmly packed dark brown sugar1
4 cup granulated sugar1
2 teaspoon salt1
2 teaspoon vanilla extract1
4 teaspoon almond extract1 1
2 cups (180 grams) all-purpose flour1 teaspoon baking powder

4 teaspoon baking soda1 (4-ounce) bar semi-sweet chocolate, chopped

STEP 1
Heat oven to 350°F.

Combine butter, sugars and salt in large bowl. Beat at medium speed, scraping bowl often, until creamy. Add egg, vanilla and almond extract. Continue beating, scraping bowl often, until well mixed.

Combine flour, baking powder and baking soda in separate bowl. Reduce speed to low. Gradually add flour mixture to butter mixture; beat until well mixed. Stir in chocolate and 1/2 cup chopped pistachios.

Form dough balls using 2 tablespoons dough each. Gently press tops of dough balls into remaining pistachios. Place dough, pistachio-side up, 3 inches apart, onto parchment-lined cookie sheets. Bake 13-16 minutes or until edges are set and golden brown. Do not overbake. Cool 2 minutes on cookie sheets; transfer parchment sheets to cooling rack.

Chopping your chocolate bar results in both chunks and shards, which helps spread the chocolate evenly throughout the cookie.

Unlike a chocolate bar, some chocolate chips have stabilizers to help retain their shape during and after baking, which results in less melty, flowy chocolate.
