Classic Shepherd's Pie

Ingredients
1 pound ground beef

2 cup) onion, chopped3 tablespoons tomato paste

3 tablespoons all-purpose flour
2 cups beef broth
1 tablespoon Worcestershire sauce
1 (10-ounce) bag frozen mixed vegetables
1 (20- to 24-ounce) package (2 1
2 to 3 cups) mashed potatoes1 (8-ounce) package (2 cups) Land O Lakes® Sharp White Cheddar Cheese, shredded
1 Half Stick (1/4 cup) Land O Lakes® Butter, melted
Chopped fresh parsley, for garnish
How to make

STEP 1
Heat oven to 375°F.

Cook beef and onion in 12-inch skillet over medium-high heat, stirring occasionally and breaking beef into pieces, 9-10 minutes or until beef is browned. Reduce heat to medium; clear small space in middle of pan. Add tomato paste, salt, pepper and garlic powder. Stir 30 seconds before mixing into beef.

Sprinkle flour evenly over beef mixture; stir to combine. Continue cooking, stirring constantly, 1 minute. Add beef broth and Worcestershire sauce. Cook, stirring occasionally, 5 minutes or until mixture has thickened to gravy consistency. Turn off heat; stir in vegetables. Spread into 3-quart casserole or 9-inch square baking dish.

Combine mashed potatoes, cheese and melted butter in medium bowl; spread evenly over beef mixture. Run fork tines over potatoes to create texture for better browning. Bake uncovered 15 minutes or until heated through.

Adjust oven to broil. Broil casserole until potatoes are golden brown around edges and in spots on top. Let stand 5 minutes before serving. Garnish with chopped parsley, if desired.

Use refrigerated mashed potatoes to save time—a 24-ounce container mixed with melted butter and sharp Cheddar cheese takes this topping to another level.
