Slow Cooker Beer Cheese Soup

Ingredients

2 cups chicken stock

1/3 cup cornstarch

1 Half Stick (1/4 cup) Land O Lakes® Butter

1 medium (1 cup) onion, chopped

1 small (1/2 cup) carrot, diced

1 small (1/3 cup) celery, diced

1 (12-ounce) bottle lager- or pale ale-style beer

2 teaspoons Worcestershire sauce

1 1/2 teaspoons ground mustard

1 teaspoon kosher salt

6 ounces (1 1/2 cups) Land O Lakes® White Deli American, cubed

4 ounces (1 cup) Land O Lakes® Habanero Jack Cheese, shredded

4 ounces (1 cup) Land O Lakes® Sharp Yellow Cheddar Cheese, shredded

 

Crumbled cooked bacon, as desired

How to make

  1. STEP 1

    Combine chicken stock and cornstarch in bowl; whisk until well dissolved. Pour into 4-quart slow cooker. Add butter, onion, carrot, celery, beer, Worcestershire sauce, ground mustard and salt. Cook on High heat setting 3 hours or until vegetables are softened.

  2. STEP 2

    Puree soup to desired consistency using immersion blender. Stir in cheeses; cover. Cook 5 minutes or until cheeses are melted. Whisk until well combined. Reduce to lowest heat setting if holding in slow cooker.

  3. STEP 3

    Serve topped with crumbled bacon as desired.

Serve this soup with a soft pretzel or garnish with popcorn for a restaurant-style presentation.
