Slow Cooker Cheesy Tomato Soup

Ingredients

1 Half Stick (1/4 cup) Land O Lakes® Butter

1 small (1/2 cup) carrot, diced

1 small (1/2 cup) onion, chopped

1 teaspoon finely chopped fresh garlic

1 tablespoon tomato paste

1 teaspoon dried basil, crushed

1 teaspoon smoked hot paprika

1 teaspoon kosher salt

1 (28-ounce) can crushed or diced tomatoes, undrained

1 cup chicken stock

1 cup tomato sauce

1/2 cup Land O Lakes® Heavy Whipping Cream

4 ounces (1 cup) Land O Lakes® Sharp White Cheddar Cheese, shredded

How to make

  1. STEP 1

    Combine all ingredients except whipping cream and cheese in order listed in 4-quart slow cooker. Cook over High heat setting 3-4 hours or until vegetables are tender.

  2. STEP 2

    Puree soup using immersion blender to desired consistency. Stir in whipping cream and cheese; cover. Cook 5-10 minutes longer or until cheese is melted. Serve garnished with additional cheese as desired.
