Veggie, Ham and Cheese Omelet

Ingredients

2 large Land O Lakes® Eggs

1 teaspoon water

1/8 teaspoon salt

1 pinch pepper

1/2 cup pieces (1/2 inch) broccoli

2 (1 tablespoon) Land O Lakes® Butter Balls

3 ounces (3/4 cup) Land O Lakes® Cheddar Jack Traditional Cut Shredded Cheese

2 tablespoons finely diced red bell pepper

1 tablespoon finely diced red onion

2 tablespoons finely diced deli ham

How to make

  1. STEP 1

    Whisk together eggs, water, salt and pepper in small bowl.

  2. STEP 2

    Place broccoli into small microwave-safe bowl; cover with damp paper towel. Cook on High 60 seconds. Set aside. 

  3. STEP 3

    Heat 10-inch nonstick skillet over medium-high heat.  Add Butter Balls; swirl to coat bottom of pan.  Add egg mixture to hot pan; cook, without stirring, 30 seconds or until bottom is just set. Run heatproof spatula around edge of pan, lifting edges of eggs and allowing uncooked portions to flow underneath.  Once egg is mostly set, scatter cheese, vegetables and ham evenly over top.

  4. STEP 4

    Remove from heat; cover skillet. Let sit 30-45 seconds or until cheese is melted. Lift one edge of omelet as you tilt pan over serving dish, folding omelet in half as it slides out of skillet. Serve immediately.
