Brown Butter Miso-Glazed Grilled Zucchini

Ingredients

1/2 cup Land O Lakes® Butter

1/4 cup white miso paste

4 medium (about 8 ounces each) zucchini

 

Green onions, sliced

Sesame seeds, toasted

Crushed red pepper flakes, as desired

How to make

  1. STEP 1

    Heat flat-top grill to medium heat.

  2. STEP 2

    Melt butter in small saucepan over medium heat, swirling pan often, until butter turns rich golden brown. Remove from heat; stir in miso until fully combined. Set aside.

  3. STEP 3

    Slice zucchini in half lengthwise; score top of each about 1/4" deep in criss-cross pattern. Place zucchini onto hot grill over direct heat, cut-sides down. cover; cook 3-5 minutes or until lightly charred. Turn zucchini over; spread about 1 tablespoon miso butter on top of each; cover. Cook uncovered 4-5 minutes or until zucchini are softened. Flip zucchini over again; cook additional 30-45 seconds or until glaze is caramelized.

  4. STEP 4

    Remove zucchini to serving platter. Garnish with green onions, toasted sesame seeds and red pepper flakes as desired.
