Ingredients

4 (2 tablespoons) Land O Lakes® Butter Balls

1 (16-ounce) package potato gnocchi

2 cups (10 ounces) cherry tomatoes

1/2 cup pesto

4 ounces (1 cup) Land O Lakes® Mozzarella Farmstyle Cut Shredded Cheese

Balsamic glaze, as desired

Fresh basil, as desired

How to make

  1. STEP 1

    Melt Butter Balls in large nonstick skillet over medium-high heat. Add gnocchi; cook, stirring occasionally, 3 minutes or until toasted and just beginning to brown in spots.

  2. STEP 2

    Add cherry tomatoes; cook, stirring occasionally, 5-7 minutes or until tomatoes begin to char in spots.

  3. STEP 3

    Remove pan from heat; stir in pesto to coat. Top with mozzarella cheese; cover pan to melt cheese. Drizzle with balsamic glaze. Garnish with fresh basil, as desired.

Tip #1

Look for packaged gnocchi next to pasta on store shelves. It can also be found in the refrigerated and frozen aisles. Either of these varieties work in this recipe.
