Crispy Lemon Pepper Fish Bites

Ingredients
1 pound cod fillets, thawed, if frozen
1 cup panko bread crumbs
1 tablespoon freshly grated lemon zest
1 teaspoon dried parsley
1
2 teaspoon cracked black pepper1
2 teaspoon salt
1 Land O Lakes® Butter with Olive Oil & Sea Salt, melted
4 cup1 tablespoon fresh lemon juice
How to make

STEP 1
Heat oven 450°F. Line large baking sheet with aluminum foil. Place metal cooling rack on top of baking sheet. Spray cooling rack with nonstick cooking spray; set aside.

Cut fish into bite-sized (2x1-inch) pieces. Pat fish bites dry with paper towel.

Combine bread crumbs, lemon zest, parsley, pepper and salt in shallow bowl; mix well.

Stir together melted Butter with Olive Oil & Sea Salt and lemon juice in another shallow bowl.

Dip each fish bite into melted butter and lemon juice; then into bread crumb mixture, coating all sides of fish and shaking off excess. Place coated fish bites onto prepared cooling rack.

Bake fish bites 12-14 minutes or until fish flakes easily with fork.
Tip #1
If fresh cod smells fishy, soak cod in milk 30 minutes. Discard milk; pat cod dry before coating.
