Ingredients
2 pounds potatoes, peeled, cut into 2-inch pieces
1 1
2 teaspoons salt, divided1
2 cup sour cream 2 cup4 (2 tablespoons) Land O Lakes® Butter Balls
3 ounces cream cheese, softened
2 tablespoons finely chopped green onions
1
4 teaspoon pepper
Land O Lakes® Butter Balls, for topping
How to make

STEP 1
Place potatoes into 4-quart saucepan; add 1 teaspoon salt and enough water to cover. Bring to a boil; continue cooking over medium heat 15-20 minutes or until fork tender; drain.

STEP 2
Combine potatoes and all remaining ingredients except green onions, remaining 1/2 teaspoon salt, pepper and Butter Balls for topping. Add green onions, remaining salt and pepper. Mash with potato masher until creamy and smooth.

Serve hot topped with Butter Balls as desired.

This recipe can be easily doubled to serve a crowd.

Swap out Land O Lakes® Half & Half for Land O Lakes® Heavy Whipping Cream for extra creamy mashed potatoes.

To make ahead, pour mashed potatoes into 1 1/2-quart ungreased casserole dish. Cover; refrigerate. To reheat in oven, place 2 Butter Balls, over potatoes, if desired. Cover with aluminum foil; bake in 350°F oven 30 minutes or until heated through. To reheat in microwave, cover with vented plastic food wrap. Microwave 5 minutes; stir. Continue microwaving 3-4 minutes or until heated through. Top with an 2 additional Butter Balls as desired, swirling to melt.
