Slow Cooker Rustic Beef Stew

Ingredients
2 pounds beef stew meat, cut into bite-sized pieces

3 cup all-purpose flour1 teaspoon salt

2 cup) onion, chopped3 (2 cups) parsnips, peeled, sliced in half lenghtwise, sliced 1/2 inch thick
2 medium (1 pound) sweet potatoes, peeled, cut into 3/4-inch pieces
1 (28-ounce) can diced tomatoes with juice
1 (14.5-ounce) can beef broth
1 tablespoon chopped fresh parsley
1 teaspoon garlic powder

STEP 1
Place beef stew meat, flour and salt into large resealable plastic food bag. Seal bag tightly; shake bag until meat is coated in flour; set aside.

Melt 2 tablespoons butter in 12-inch skillet over medium heat until sizzling. Add onion; cook 2-3 minutes or until onion softens.

Add beef to skillet; discard extra flour. Cook, stirring occasionally, 5-7 minutes or until meat is browned.

Add beef and juices from skillet to slow cooker. Cut remaining 4 tablespoons butter into small pieces; add to slow cooker. Add all remaining ingredients to slow cooker. Stir to combine.

Cover; cook on Low heat setting 8-10 hours, or High heat setting 4-6 hours or until vegetables and meat are tender.
