Butter Poached Salmon
Salmon fillets take to poaching in butter beautifully. A squeeze of lime adds brightness to the butter sauce. Drizzle over the salmon when serving.

Ingredients
1 Half Stick (1/4 cup) Land O Lakes® Butter
1 pound (1-inch-thick) salmon fillet, cut into 4 equal pieces
1
8 teaspoon kosher salt2 tablespoons chopped fresh dill
1 lime, quartered
How to make

STEP 1
Melt butter in 12-inch skillet over medium-low heat until sizzling.

Place salmon into skillet, skin-side down. Cook, basting salmon with butter occasionally, 3 minutes. Turn salmon; continue cooking and basting with butter, 3-4 minutes or until salmon flakes easily with fork or desired doneness. Adjust cooking time depending on thickness of salmon.

Turn salmon; sprinkle tops with salt. Remove salmon to serving plates.

Stir dill into butter remaining in pan. Spoon dill butter over salmon. Squeeze lime quarter over each piece of salmon. Serve immediately.
