Baby Broccoli with Pancetta & Balsamic Glaze

Ingredients
3 ounces pancetta, finely chopped
2 tablespoons Land O Lakes® Butter
2 large shallots, finely chopped
2 cloves fresh garlic, finely chopped

2 pounds baby broccoli, ends trimmed3
4 cup white wine or apple juice3 tablespoons balsamic vinegar
2 tablespoons sugar
Salt, if desired
Pepper, if desired
How to make

STEP 1
Cook pancetta in 12-inch skillet over medium heat until crispy. Remove from skillet; set aside.

STEP 2
Melt butter in same skillet with pancetta drippings until sizzling; add shallots and garlic. Cook until softened.

STEP 3
Add baby broccoli and wine. Cover; cook 5-8 minutes or until broccoli is crisply tender. Add balsamic vinegar and sugar; bring to a boil. Cook 3-5 minutes or until mixture is thickened. Add salt and pepper, if desired.

Garnish with crispy pancetta. Serve immediately.
