Confetti Salmon Patties

Ingredients

4 cup finely chopped cucumber1
2 cup dry bread crumbs2 (5-ounce) cans boneless skinless salmon, drained

2 teaspoons dried dill weed1
8 teaspoon garlic powder1 tablespoon Land O Lakes® Butter

2 cup mayonnaise1
4 cup sour cream1
2 teaspoon freshly grated lemon zestHow to make

STEP 1
Combine 1/2 cup cucumber, breadcrumbs, salmon, carrot, egg and 1 teaspoon dill weed in bowl; mix lightly. Shape into 4 (3/4-inch thick) patties.

Melt butter in 10-inch nonstick skillet until sizzling; add patties. Cook over medium heat, turning once, 6-10 minutes or until golden brown and cooked through.

Combine remaining cucumber, remaining dill weed, mayonnaise, sour cream and lemon zest in bowl; mix well. Serve mixture with salmon patties.
