Chewy Molasses Sandwich Cookies

Ingredients

Cookie

2 cups all-purpose flour

1 1/2 teaspoons baking soda

1/2 teaspoon salt

1/2 teaspoon ground cinnamon

1/2 teaspoon ground nutmeg

1 cup sugar

3/4 cup Land O Lakes® Butter, softened

1 large Land O Lakes® Egg

1/4 cup molasses

1/4 cup sugar

Filling

2 1/2 cups powdered sugar

1/4 cup Land O Lakes® Butter, softened

2 tablespoons honey

1 1/2 teaspoons freshly grated orange zest

2 to 3 tablespoons Land O Lakes® Half & Half

How to make

  1. STEP 1

    Heat oven to 350°F.

  2. STEP 2

    Combine flour, baking soda, salt, cinnamon and nutmeg in medium bowl; set aside.

  3. STEP 3

    Combine 1 cup sugar and 3/4 cup butter in large bowl. Beat at medium speed until well mixed. Add egg and molasses; continue beating until well mixed. Add flour mixture; beat at low speed until well mixed.

  4. STEP 4

    Place 1/4 cup sugar in small bowl. Shape dough into 3/4-inch balls; roll each in sugar. Place 2 inches apart onto ungreased cookie sheets. Bake 5-7 minutes or until edges are set. (Cookies will have cracks.) Cool 1 minute on cookie sheets; remove to wire cooling rack. Cool completely.

  5. STEP 5

    Meanwhile, combine all filling ingredients except half and half in small bowl. Beat at low speed until well mixed. Continue beating; adding enough half and half for desired filling consistency. Spread bottom-side of 1 cookie with rounded teaspoonful filling; top with another cookie, bottom-side down. Repeat with remaining cookies.

Tip #1

- To make ahead, bake cookies as directed. Place unfilled cookies in containers with tight-fitting lids. Freeze up to 1 month. Prepare filling the day you are serving cookies.

Tip #2

- For uniform crackling on top of cookies, bake one cookie sheet at a time.
