Cheesy Ranch Stuffed Potatoes

Ingredients

Potatoes

4 large baking potatoes

14 (3/4-ounce) slices Land O Lakes® Yellow Deli American

2 tablespoons Land O Lakes® Butter, softened

1 tablespoon dry ranch dressing mix

2 to 4 tablespoons milk

Toppings

Crisply cooked crumbled bacon, if desired

Chopped cooked broccoli, if desired

Sautéed peppers and onions, if desired

Chopped cooked ham, if desired

Salsa, if desired

Pre-cooked sausage crumbles, if desired

How to make

  1. STEP 1

    Wash potatoes; prick each potato 2 to 3 times with fork. Place in microwave on paper towel; microwave 7 minutes. Turn potatoes over; continue microwaving 6-10 minutes or until fork tender. Remove from microwave; let stand 5-10 minutes or until cool.

  2. STEP 2

    Cut 6 slices cheese into quarters; set aside.

    Cut each potato in half lengthwise. Scoop out potato, leaving thin shell. Place potato into bowl; add cheese quarters, butter, ranch dressing mix and enough milk for desired consistency; mix well. Line each potato shell with 1 slice cheese. Fill potato shells evenly with potato mixture; top with desired toppings. Place onto plate. Microwave potatoes 1-2 minutes or until hot and cheese is melted. Serve immediately.

Tip #1

For softer potatoes, add milk, 1 tablespoon at a time, until desired consistency is reached.
