Ingredients

Chicken

2 (6-ounce) boneless skinless chicken breasts

1 1/2 cups buttermilk  

1 teaspoon salt

1 teaspoon garlic powder

1 teaspoon pepper

Coating

1 cup Italian bread crumbs

3/4 cup all-purpose flour

2 large Land O Lakes® Eggs, beaten

2 tablespoons buttermilk  

 

3 tablespoons vegetable oil

8 (3/4-ounce) slices Land O Lakes® Italian Blend, cut in half diagonally

8 slider buns

1/2 cup marinara sauce, warmed

 *Substitute 1 1/2 tablespoons vinegar or lemon juice and enough milk to equal almost 1 3/4 cups. Let stand 5 minutes. Use 1 1/2 cups for chicken and 2 tablespoons for bread crumbs.

How to make

  1. STEP 1

    Slice chicken breasts in half width-wise; cut each half into 2 pieces. Lightly pound each piece with meat tenderizer to 1/4-inch thickness.

  2. STEP 2

    Combine chicken, 1 1/2 cups buttermilk, salt, garlic powder and pepper in gallon-sized resealable plastic food bag. Seal bag; shake until chicken is well coated. Refrigerate at least 2 hours or overnight.

  3. STEP 3

    Place bread crumbs, flour and eggs into individual shallow bowls. Add 2 tablespoons buttermilk to bread crumbs; stir until combined.

  4. STEP 4

    Remove chicken tenders from marinade, shaking off excess. Coat each chicken tender with flour, shaking off excess. Dip into beaten egg. Press into bread crumb mixture.

  5. STEP 5

    Heat oil in 12-inch nonstick skillet over medium-high heat until piece of breading dropped into pan begins to sizzle.

  6. STEP 6

    Heat oven to 200ºF.

  7. STEP 7

    Place 4 chicken pieces into skillet; cook 6-8 minutes, turning once, until internal temperature of chicken reaches 165°F, chicken is golden brown and is no longer pink in center. Keep cooked chicken warm in oven; repeat cooking process with remaining chicken.

  8. STEP 8

    Place 1 piece cheese onto each bottom half of bun, top each with 1 piece chicken, 1 tablespoon marinara sauce and 1 piece cheese. Serve immediately.
