Easy Lemon Bars

Ingredients
Crust
2 cups all-purpose flour
1 cup Land O Lakes® Butter, softened
1
2 cup powdered sugar1
4 teaspoon saltFilling
1 1
2 cups granulated sugar1
4 cup fresh lemon juice1
4 cup all-purpose flour2 to 3 teaspoons freshly grated lemon zest
1 teaspoon baking powder
Topping
1 teaspoon powdered sugar
How to make

STEP 1
Heat oven to 350°F.

STEP 2
Combine all crust ingredients in large bowl. Beat at low speed until mixture resembles coarse crumbs. Press mixture evenly onto bottom of ungreased 13x9-inch baking pan. Bake 20-22 minutes or until light brown; remove from oven.

Combine all filling ingredients in bowl. Beat at medium speed until well mixed. Pour lemon mixture evenly over hot, partially baked crust.

Continue baking 15-20 minutes or until filling is set and bars are light brown around edges. Cool completely.

Sprinkle bars with 1 teaspoon powdered sugar. Cut into bars.
Tip #1
For easy cutting, line pan with parchment paper, extending paper over edges of pan. Prepare bars as directed. Completely cool bars. Lift bars out of pan using paper ends; cut bars on cutting board.
Tip #2
This recipe was tested in a metal baking pan; if you use a glass or ceramic baking dish, you may need to increase bake time a few minutes more.
