Ingredients

3 Land O Lakes® Butter, softened
4 cup3
4 cup firmly packed brown sugar2 medium (1 cup) ripe bananas, mashed
2 teaspoons freshly grated orange zest

2 teaspoon vanilla extract2 cups all-purpose flour

2 teaspoon baking powder1
2 teaspoon baking soda1
4 teaspoon saltFrosting
4 cup1
4 cup firmly packed brown sugar 4 cup1 1
4 cups sifted powdered sugar1
2 teaspoon vanilla extract
Grated orange zest, if desired
How to make

STEP 1
Heat oven to 350°F.

Combine 3/4 cup butter and 3/4 cup brown sugar in bowl. Beat at medium speed, scraping bowl often, 2-3 minutes or until creamy. Add bananas, egg, 2 teaspoons orange zest and 1/2 teaspoon vanilla; continue beating until well mixed. Add flour, baking powder, baking soda and salt; beat at low speed until well mixed.

Drop dough by rounded tablespoonfuls, 2 inches apart, onto ungreased cookie sheets. Bake 8-10 minutes or until edges are lightly browned. Cool completely.

Melt 1/4 cup butter in 1-quart saucepan over medium heat. Add 1/4 cup brown sugar and half & half. Continue cooking, stirring occasionally, until mixture comes to a boil. Remove from heat. Add powdered sugar and 1/2 teaspoon vanilla; beat until well mixed. Let cool.

Frost cooled cookies just before serving. Garnish with orange zest, if desired. Let stand until frosting is set.
Tip #1
Bananas can be “ripened” by placing in a 300°F oven 30-40 minutes or until deeply blackened and soft to the touch.
Tip #2
If using darker colored baking pans, these cookies may take slightly less time to bake. Start checking after 6 minutes of bake time.
