Ingredients

1 tablespoon Land O Lakes® Fresh Buttery Taste® Spread

1 small (1/2 cup) red bell pepper, chopped

1 small (1/2 cup) onion, chopped

1 (15-ounce) cans black beans, rinsed, well-drained

1 to 2 teaspoons fresh chopped jalapeno chiles

1 (12-ounce) contained (1 1/2 cups) refrigerated guacamole

1 cup salsa

1 cup shredded lettuce

8 ounces (2 cups) shredded Cheddar cheese

 

Corn or tortilla chips

How to make

  1. STEP 1

    Melt Fresh Buttery Taste® Spread in 10-inch skillet until sizzling; add red pepper and onion. Cook over medium heat, stirring occasionally, 3-5 minutes or until onion is softened. Stir in beans and jalapeño chiles. Continue cooking 2-3 minutes or until heated through.

  2. STEP 2

    Transfer 1 cup bean mixture to food processor bowl fitted with metal blade or 5-cup blender container. Cover; process on High speed 30-60 seconds or until smooth. Return blended mixture to remaining bean mixture; stir to combine. Spread bean mixture onto 12-inch serving platter. Cover; refrigerate 2 hours or overnight.

  3. STEP 3

    Layer guacamole, shredded lettuce, salsa and cheese over bean mixture just before serving.

  4. STEP 4

    Serve with corn or tortilla chips.
