Ingredients

1 cup chicken or vegetable broth

1 cup water

2 cups instant white rice

1/2 cup shredded or finely chopped carrots

1/2 cup chopped red bell pepper

1 teaspoon finely chopped fresh garlic

1/4 cup slivered almonds

1/4 cup chopped fresh parsley

1/4 cup sliced green onions

1 tablespoon Land O Lakes® Butter

How to make

  1. STEP 1

    Place chicken broth, water, rice, carrots, red pepper and garlic in 3-quart saucepan. Cook over high heat until broth comes to a full boil.

  2. STEP 2

    Cover; remove from heat. Let stand 5-7 minutes or until water is absorbed.

  3. STEP 3

    Stir in all remaining ingredients. Serve immediately.

Tip #1

Variation:
Italian Rice Pilaf: Omit all ingredients except broth, water and rice. Place broth, water and rice in 3-quart saucepan. Add 1/2 cup chopped onion, 1/2 cup chopped green pepper and 1 teaspoon finely chopped garlic to saucepan. Cook over high heat until broth comes to a full boil. Cover; remove from heat. Let stand 5-7 minutes or until water is absorbed. Stir in 1 cup seeded chopped tomatoes, 1 tablespoon chopped fresh basil leaves and 1 tablespoon Parmesan & herb seasoning. Serve immediately.
