How to make
-
STEP 1
Bring 1-inch of water in 3-quart saucepan to a boil. Place 6 eggs in steam basket; place steam basket into saucepan; cover. Steam eggs 13 minutes.
-
STEP 2
Remove eggs from basket; place immediately into ice water bath. Let stand 15 minutes.
-
STEP 3
Place eggs and 1 to 2 cups water in sturdy plastic food container. Cover with tight fitting lid. Shake eggs in water vigorously until shells begin to separate from eggs.
-
STEP 4
Peel shell from eggs. Shells should remove easily.
Tip #1
- After draining hot water and before adding ice water to eggs in pan, roll eggs around in pan to slightly crack shells. Water will seep under shell, making peeling easier.
Tip #2
- A greenish ring around egg yolk? This is a reaction between sulfur in the egg white and iron in the egg yolk. This happens when eggs have been cooked at too high a temperature for too long a time.
