Mixed Berry Shortcake

Ingredients

2 cups fresh strawberries, hulled, halved

1 cup fresh blueberries

1 cup fresh raspberries

2 tablespoons granulated sugar

1 1/2 cups Land O Lakes® Heavy Whipping Cream

3 tablespoons powdered sugar

1/4 teaspoon almond extract

1/4 teaspoon vanilla extract

6 Buttery Drop Biscuits

How to make

  1. STEP 1

    Stir together strawberries, blueberries, raspberries and granulated sugar in bowl; let stand 20 minutes.

  2. STEP 2

    Combine whipping cream, powdered sugar, almond extract and vanilla in medium bowl. Beat at high speed until soft peaks form. Refrigerate until ready to build shortcakes.

  3. STEP 3

    Slice each biscuit horizontally. Top bottom halves of each with 3/4 cup fruit; cover with top half. Add generous dollop of whipped cream. Serve immediately.

Tip #1

Tossing fruit with sugar and letting stand at room temperature to draw out the juices is called maceration. After the fruit is juicy, cover and store refrigerated.

Tip #2

No almond extract? Double the vanilla.
