Key Lime Soufflé with Pecan Streusel

Ingredients
Pecan Streusel
4 cup1
4 cup sugar1
2 cup chopped pecansSoufflé
1 (1/4-ounce) envelope unflavored gelatin

3 cup Key lime juice1 (14-ounce) can sweetened condensed milk
1 to 2 drops green food color, if desired
How to make

STEP 1
Prepare six (4-ounce) soufflé dishes by wrapping 6 strips of lightly oiled aluminum foil around outside of dishes to form collar, extending 1 inch above top edge.

Melt butter in 1-quart saucepan; stir in sugar. Cook over medium heat 1 minute or until mixture just comes to a boil. Stir in pecans; continue cooking 1 minute. Remove from pan. Set aside.

Pour lime juice into 1-quart saucepan; sprinkle with gelatin. Let stand 5 minutes or until gelatin is softened. Cook over low heat, stirring occasionally, 1-2 minutes or until gelatin is dissolved. Add sweetened condensed milk and food color to gelatin mixture; mix well.

Beat chilled whipping cream in chilled bowl at high speed, scraping bowl often, until stiff peaks form. Gently stir in lime mixture.

Place 1 tablespoon pecan streusel in bottom of each prepared soufflé dish. Divide lime mixture evenly among prepared dishes. Cover; refrigerate 3 hours or until firm.

Remove foil; gently press remaining streusel mixture around edges of each soufflé.
