Ingredients
1 cup uncooked couscous
1 Land O Lakes® Cinnamon Sugar Butter Spread
4 cup1
4 teaspoon salt1 1
2 cups boiling water1
2 cup dried apricots, chopped1
2 cup coarsely chopped pecans1
4 cup finely chopped fresh parsley
How to make

STEP 1
Place couscous, Cinnamon Sugar Butter Spread and salt into large serving bowl; add boiling water. Cover bowl with plastic food wrap; let stand 5 minutes. Fluff mixture with fork.

STEP 2
Add apricots, pecans and parsley. Toss gently until well mixed. Garnish with additional fresh parsley, if desired. Serve warm, at room temperature or chilled.
