Pepperoni 'n Chive Mini Muffins

Ingredients

2 cups pancake and baking mix1 cup sour cream
4 cup chopped fresh chives1
4 cup milk1 large Land O Lakes® Egg, slightly beaten

4 teaspoon garlic powder1
3 cup chopped pepperoniHow to make

STEP 1
Heat oven to 400°F. Spray 24 mini muffin pan cups with no-stick cooking spray; set aside.

Combine all ingredients except pepperoni in bowl. Stir just until moistened. Gently stir in pepperoni.

Spoon batter into prepared muffin pan cups, filling each 3/4 full. Bake 15-17 minutes or until lightly browned. Cool 5 minutes; remove from pans.
