Roasted Pork Loin with Fruit Salsa

Ingredients
Spice Rub
1 teaspoon chili powder
1
2 teaspoon ground cumin1
4 teaspoon garlic salt1
4 teaspoon salt1
4 teaspoon ground red pepper (cayenne)Pork
1 (2- to 2 1/2-pound) boneless pork loin
1 Land O Lakes® Butter with Olive Oil & Sea Salt
4 cupSalsa
1
2 cup finely chopped mango1
2 cup finely chopped pineapple1
2 cup finely chopped strawberries1
4 cup finely chopped red onion1 tablespoon fresh lime juice
How to make

STEP 1
Heat oven to 350ºF. Line 13x9-inch glass baking dish or roasting pan with aluminum foil; set aside.

Combine all spice rub ingredients in bowl; rub onto pork loin.

Melt Butter with Olive OIl & Sea Salt in 12-inch skillet until sizzling. Add pork; cook until browned on all sides. Place into prepared pan; pour butter from pan over pork.

Bake 60-70 minutes or until internal temperature reaches 145ºF. Let rest 15 minutes before serving.

Combine all salsa ingredients in bowl. Serve with roasted pork.
