Slow Cooker Cheesy Chicken Wild Rice Soup

Ingredients
5 cups chicken stock

3 cup all-purpose flour1 Half Stick (1/4 cup) Land O Lakes® Butter

2 cup uncooked wild rice, rinsed under cold water1 pound boneless skinless chicken thighs or breast, cut into 3/4-inch pieces

2 cup) carrot, chopped1 rib (1
2 cup) celery, chopped1 1
2 teaspoons kosher salt1 teaspoon garlic powder

2 teaspoon pepper1 Land O Lakes® Heavy Whipping Cream
2 cup1 (8-ounce) package (2 cups) Land O Lakes® Sharp Yellow Cheddar Cheese, shredded
Sliced green onions, as desired
How to make

STEP 1
Whisk together chicken stock and flour until well combined and smooth; set aside.

Combine butter, wild rice, chicken, onion, carrot, celery, salt, garlic powder and pepper in 4-quart slow cooker. Stir in flour mixture. Cover; cook on Low heat setting 6 hours or until rice and veggies are tender and chicken is cooked through.

Stir in whipping cream and cheese; cover. Cook 5-10 minutes or until cheese is melted. Ladle into bowls. Garnish with green onions, as desired.

Slow cookers vary greatly in size and power output so cook times may vary. Always test for doneness/tenderness and adjust time accordingly.

Prefer a thinner soup? Feel free to add extra chicken stock or cream to achieve your desired consistency.
