Slow Cooker Chicken Wild Rice Soup

Ingredients

5 cups chicken stock

1/3 cup all-purpose flour

1/4 cup Land O Lakes® Butter Balls

1/2 cup uncooked wild rice, rinsed under cold water

1 pound boneless skinless chicken thighs or breast, cut into 3/4-inch pieces

1 large (1 cup) onion, chopped

1/2 cup chopped carrot

1 rib (1/2 cup) celery, chopped

1 1/2 teaspoons kosher salt

1 teaspoon garlic powder

1/2 teaspoon pepper

1/2 cup Land O Lakes® Heavy Whipping Cream

8 ounces (2 cups) Land O Lakes® Sharp Yellow Cheddar Cheese, shredded

 

Sliced green onions, as desired

How to make

  1. STEP 1

    Whisk together chicken stock and flour until well combined and smooth; set aside.

  2. STEP 2

    Combine butter, wild rice, chicken, onion, carrot, celery, salt, garlic powder and pepper in 4-quart slow cooker. Stir in flour mixture. Cover; cook on Low heat setting 6 hours or until rice and veggies are tender and chicken is cooked through.

  3. STEP 3

    Stir in whipping cream and cheese; cover. Cook 5-10 minutes or until cheese is melted. Ladle into bowls. Garnish with green onions, as desired.

Tip #1

Slow cookers vary greatly in size and power output so cook times may vary. Always test for doneness/tenderness and adjust time accordingly.

Tip #2

Prefer a thinner soup? Feel free to add extra chicken broth or cream to achive your desired consistency.
