Ingredients

4 cup firmly packed brown sugar1
3 cup mild or full flavor molasses1 teaspoon vanilla

4 cups all-purpose flour1 teaspoon baking soda
1 teaspoon ground cinnamon

2 teaspoon baking powder1
2 teaspoon ground gingerHow to make

STEP 1
Heat oven to 375°F.

Melt butter in 3-quart saucepan over low heat, stirring constantly. Stir in brown sugar and molasses. Remove from heat. Stir in egg and vanilla until well mixed. Stir in all remaining ingredients just until combined.

Drop dough by rounded teaspoonfuls, 2 inches apart, onto ungreased cookie sheets. Bake 7-9 minutes or until set.

Sweet, aromatic molasses comes from juices pressed from sugar cane. The juices are boiled to concentrate flavors. During the first boiling, light molasses is produced. It has a mild flavor. Full flavor or dark molasses comes from the second boiling of juices. Both are great for cookies and cakes.
