Southwest Sausage Frittata

Ingredients

3 cup milk2 tablespoons Land O Lakes® Butter
3
4 cup cooked crumbled breakfast sausage1
2 cup black beans, rinsed, drained2 tablespoons chopped green chiles
3
4 cup shredded hot pepper jack cheeseChopped fresh cilantro, if desired
Refrigerated fresh salsa, if desired
How to make

STEP 1
Combine eggs and milk in bowl; beat with whisk until well mixed.

Melt butter in 8-inch nonstick skillet until sizzling; add egg mixture. Cook over medium heat, gently lifting and stirring slightly with spatula to allow uncooked portion to flow underneath, 1-2 minutes or until almost set. Sprinkle sausage, beans and green chiles over eggs. Cover; continue cooking 7-9 minutes or until set.

Sprinkle with cheese. Cover; remove from heat. Let stand 1 minute or until cheese is melted. Sprinkle with chopped cilantro, if desired.

Cut into 6 wedges. Serve each with salsa, if desired.
