Sweet Potato Muffins

2 cups) sweet potato, peeled, finely shredded2

4 teaspoon maple flavoring3 to 4 teaspoons milk
How to make

STEP 1
Heat oven to 375°F. Spray 12-cup muffin pan with no-stick cooking spray; set aside.

Combine sugar and butter in bowl; beat at medium speed until creamy. Add egg and vanilla; continue beating until well mixed.

Combine flour, baking powder, cinnamon, salt and nutmeg in bowl. Stir into butter mixture alternately with milk, mixing until dry ingredients are moistened. Stir in sweet potato and walnuts.

Divide batter evenly among prepared muffin cups. Bake 20-25 minutes or until toothpick inserted in center comes out clean. Cool in pan 5 minutes. Remove to cooling rack.

Combine powdered sugar, maple flavoring and enough milk for desired glazing consistency. Spread or drizzle glaze onto warm muffins. Serve warm.
