Sticky Coconut Shortbread Bites

Ingredients
Crust
1 cup all-purpose flour
1
2 cup firmly packed brown sugar1 Land O Lakes® Butter, softened
4 cup1 cup sweetened flaked coconut
Caramel
2 cup1
2 cup firmly packed brown sugarTopping
1
3 cup dark chocolate chips1 teaspoon shortening
Decorator sprinkles, if desired
How to make

STEP 1
Heat oven to 350ºF. Line 8-inch square baking pan with aluminum foil, extending foil over edges. Spray foil with no-stick cooking spray; set aside.

Combine flour, 1/2 cup brown sugar and 1/4 cup butter in bowl. Beat at low speed, scraping bowl often, until mixture resembles coarse crumbs. Press onto bottom of prepared pan. Spread coconut evenly over crust.

Place 1/2 cup butter and 1/2 cup brown sugar into 2-quart saucepan. Cook over medium heat, stirring constantly, until entire surface of mixture boils. Boil 1 minute, stirring constantly. Pour caramel evenly over coconut and crust.

Bake 16-18 minutes or until entire caramel layer is bubbly. Remove from oven. Cool completely.

Place chocolate chips and shortening into bowl. Microwave, stirring once, 1-2 minutes or until melted and smooth. Drizzle over bars. Top with sprinkles, if desired. Cool completely.

Lift bars out of pan, using foil ends. Cut into bars.
