Teriyaki Beef Stir-Fry

Ingredients

Teriyaki Glaze

3 tablespoons soy sauce

3 tablespoons mirin

3 tablespoons seasoned rice vinegar

2 tablespoons hoisin sauce

1 tablespoon firmly packed brown sugar

1 teaspoon finely chopped fresh garlic

1/2 teaspoon freshly grated ginger root  

Stir-Fry

2 tablespoons Land O Lakes® Butter

3 cups fresh broccoli florets

1 (14-to 15-ounce) can baby corn, drained, cut in half

1 pound beef stir-fry strips

1 teaspoon sesame seeds

 

4 cups hot cooked rice

 *Substitute 1/4 teaspoon ground ginger.

How to make

  1. STEP 1

    Combine all teriyaki glaze ingredients in 1 1/2-quart saucepan. Cook, stirring occasionally, over medium heat 5-6 minutes or until liquid is reduced to thick paste. Set aside.

  2. STEP 2

    Melt butter in 12-inch skillet until sizzling.  Add broccoli and baby corn. Cook over medium-high heat, stirring occasionally, 3-4 minutes or until broccoli is crisply tender. Add beef and sesame seeds. Cook, stirring occasionally, 4-5 minutes or until beef is browned. Drain, if necessary.

  3. STEP 3

    Stir in teriyaki glaze until vegetables and beef are coated.

  4. STEP 4

    Serve with hot cooked rice.

Tip #1

- Many supermarkets will offer pre-cut beef strips for stir-frying. If they're not available, use top round steak and thinly slice the meat across the grain into bite-sized strips. Partially freezing the meat, about 20 minutes, before cutting will make it easier to slice into thin strips.

Tip #2

- Baby corn can be found in the Asian section of the supermarket.

Tip #3

- Mirin is a condiment made from rice, often found in Japanese recipes. It adds sweetness and flavor. Mirin can be found in the Asian or gourmet section of large supermarkets as well as Asian markets.
