Teriyaki Chicken Stir-Fry

Ingredients
Teriyaki Glaze
2 tablespoons soy sauce
2 tablespoons mirin
2 tablespoons seasoned rice vinegar
2 tablespoons firmly packed brown sugar
1 tablespoon hoisin sauce
Stir-Fry
4 (2 tablespoons) Land O Lakes® Butter Balls
1 pound boneless skinless chicken breasts, cut into 1-inch pieces
Rice
2 (10-ounce) packages frozen microwaveable white rice
Stir-Fry
1 (12-ounce) package fresh vegetable stir-fry mix
How to make

STEP 1
Combine all teriyaki glaze ingredients in 1 1/2-quart saucepan. Cook over medium heat 5-6 minutes or until liquid is reduced to thick paste. Set aside.

STEP 2
Melt Butter Balls in 10-inch nonstick skillet over medium heat until sizzling. Add chicken; cook, stirring occasionally, 6-8 minutes or until chicken is no longer pink in center. Add vegetables. Continue cooking, 6-8 minutes, stirring occasionally, until vegetables are crisply tender. Stir in teriyaki sauce until chicken and vegetables are well coated.

STEP 3
Prepare rice according to package directions while chicken mixture is cooking.

Spoon rice onto serving platter; top with chicken mixture.
