Egg Bakes or Stratas
Egg bakes or stratas are made from a mixture of bread, eggs and cheese. They can incorporate a variety of other flavors by adding meat and/or vegetables. Egg bakes are the ideal make-ahead breakfast or brunch dish and can make your life so much simpler. The night before you are serving, it takes about 30 minutes to put the egg mixture together. Then you can forget about it for next 8 hours or overnight. This holding time allows the bread layers time to soak up the savory custard. The next morning, the only step is to bake it. Preparing it in a glass baking dish will make it ready to present to guests right out of the oven.
Quiches
Quiches are very versatile and quick to put together. They can be used any time of the day- even as appetizers. Quiche’s typically have a pastry or pie crust on the bottom and filled with a combination of eggs, cream, cheese along with various other meat and/or vegetables. To finish cooking the top, they are sometimes placed under the broiler for a few minutes. They can be cut into wedges and served right from the pan.
